In terms of watchouts, I'd consider your specific team in terms of skill mix and how they prefer to engage, much like any team session, so you get the best out of it. Make sure afterwards you're able to prioritise actions and share that back with the team too-- it may be that a great idea emerged, but it's one for later, so that should be clearly communicated so the value of the session is visible to all.
I've done many project audits myself before as well as heuristic evaluations but I have never done this team teardown evaluation. Sounds great!
